skilled immigrants from EU with two dogs

Hello,

We are couple from EU, looking for permanent migration to Australia. We are interested in moving to NSW, settling there and establishing our own permaculture/biodynamic farm.
As far as we know we could apply for Skilled Migration Visa.

few questions:
What is the fastest way to get Immigration visa?
Which type of visa is more appropriate for our case?
We hold degrees in: Landscape Architecture and Hydrotechnical Construction Engineering- my female partner and Architecture and Community Plannig - myself.
How to go about with our two dogs? What kind of documents and preparations are required to get them with us?
